Oh how I love a good muffin. A little chewy on the outside, light and fluffy on the inside. Now this muffin recipe is a little different than your run of the mill banana muffin, or even your basic orange muffin, but rather a combination of heavenly tastes and aromas!
Don’t let the ingredient list fool you– it’s simple and straightforward– I actually had everything on hand… a rare occurrence. This recipe I adapted from Keeley McGuire with a couple modifications… Enjoy!
2 1/4 cup flour
2 tsp baking powder
1/2 tsp salt
2 large ripe bananas, mashed
2/3 brown sugar
1/2 cup butter, melted
1 tbsp vanilla
3 tbsp of buttermilk (totally optional)
1 1/2 tbsp fresh orange juice (I think the more the better)
1 1/2 cups of strawberries, sliced
1 tbsp grated orange zest, divided
4 tbsp sugar
Preheat to 375 degrees F. Spray pam or butter on the muffin tins.
Combine all the dry ingredients (Flour, baking powder, salt). Combine all the wet ingredients (bananas, eggs, brown sugar, melted butter, vanilla, and buttermilk). Stir in orange juice, 1/2 t of the zest, and the strawberries.
Mix remaining zest and 3T of sugar together.
Scoop batter into the muffin tins. I made 6 super duper large muffins, but I would imagine this recipe could make 12 normal muffins. After scooping the batter into tins, sprinkle the orange sugar on top lightly.
Bake for about 15-20 minutes or until a toothpick comes out clean! Voila– deliciousness…
