Simple, delicious and great for the mom on the go.
Crock Pot Beef & Broccoli
- 1 lb boneless beef (I used thin sliced steak, but any type of stew meat could work too!)
- 1 cup beef stock (bouillon cubes is ok moms)
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup terryaki sauce
- 1 T Sesame oil
- 1t grated ginger
- 4 cloves finely minced garlic
- 2 T cornstarch
- 2 T water
- Fresh broccoli (I used frozen and it worked perfectly!)
- Cooked Steamed rice
Place the 8 first ingredients in to your handy dandy crock pot. Mix together thoroughly. Cover with lid and cook for 4-5 hours on high or 6-8 hours on low.
In a cup, stir together cornstarch and water until smooth. Pour in to the crock pot and stir well. If you are using fresh broccoli, blanch it in boiling water or microwave it until part way done. If using frozen, toss them into the crock pot directly. Stir to combine and get the sauce all over the broccoli.
Cover and cook another 20 minutes on high until nice and thick! Enjoy over hot steamed rice– yum!
