Crock Pot Chicken Pho- Vietnamese Soup {Recipe}

When the weather cools down, the first soup I think of to make is Phở or pho.  Phở is a Vietnamese noodle soup consisting of delicious broth, linguine-shaped rice noodles called bánh phở, a few herbs and vegetables, and meat. I love it with chicken, but beef is amazing too! Check out my recipe, add your own favorite Asian flavors and enjoy!

Chicken Pho- Vietnamese Soup {Recipe}

Ingredients
  • Soup ingredients:
  • 1 whole chicken, cut up
  • 4 quarts of chicken stock or water
  • 1 yellow onion cut in half
  • 1 Carrot cut up into large chunks
  • 4 inch chunk of ginger, unpeeled
  • 5 T fish sauce
  • 2 T Hoisin Sauce– (look in your Asian food aisle or an Asian grocery store)
  • 1 ½ tsp. kosher salt
  • 1 small bunch of cilantro
  • Sides:
  • 1 package rice noodles (dried–
  • bean sprouts
  • fresh cilantro, roughly chopped
  • fresh thai basil, roughly chopped
  • lime wedges
  • Sriracha hot sauce (to YOUR taste)– (look in your Asian food aisle or an Asian grocery store)
  • Hoisin sauce (to YOUR taste)– (look in your Asian food aisle or an Asian grocery store)
  • sliced jalapeno or another hot pepper
Instructions
  1. Directions:
  2. In a large crock pot, add the first 9 ingredients. Let cook on low for 8 hours or high for 5-6 hours. Strain the broth and discard the solids. Taste the broth and adjust seasoning with salt and pepper.
  3. Set chicken aside. When the chicken is cool, remove the meat off the bones and discard skin/bones. Slice the chicken into thin slices/pieces.
  4. Prepare rice noodles as directed on package.
  5. In your soup bowls, layer the chicken, then a serving of noodles, then your flavorful broth.
  6. Have all your sides out like a buffet. Love all the fixings in mine– The more cilantro and sprouts the better!
