Salmon, Roasted Tomato, Spinach & Feta Pasta {Recipe}

This dish is the perfect “go to” for a quick, satisfying meal that is not only heart healthy, but delicious!

Heart healthy salmon, gorgeous roasted tomatoes, followed with tangy feta cheese and green spinach! Combined with a lemon-y vinaigrette, all mean yum for dinner!

Salmon, Roasted Tomato, Spinach & Feta Pasta

Serves: 4-6 people
  • 3 cloves garlic
  • 1/4 cup lemon juice
  • 1 T lemon zest
  • 1 T Italian seasoning dried (oregano, parsley, basil, etc…)
  • 1/4 t chili flakes– more if you like it spicy!
  • 1/4 t salt
  • 1/4 t fresh ground pepper
  • 1/2 cup olive oil
  • 2 T dijon mustard
  • 1 box of pasta (regular or whole wheat)
  • 1/8 cup of salted butter
  • Salmon, de-boned and cubed (enough for your family)
  • 8 ounces of heirloom cherry tomatoes
  • 1 tub of Feta cheese, crumbled
  • 2 cups of fresh, washed spinach, ends trimmed
  • salt and pepper to taste
  1. In a food processor, combine the vinaigrette ingredients until a nice dressing is established.
  2. Saute your tomatoes on high heat in a pan. Let cook until a bit charred and blistered. Place in bowl to cool and set to side.
  3. Saute the salmon in same pan as tomatoes. Cook until just about done. The salmon will continue to cook a bit and finish when tossed with the pasta.
  4. Cook your pasta until as dente. Drain, and transfer to a bowl. Place the butter on top to melt, followed by half of the vinaigrette.
  5. Place tomatoes, salmon, feta on the pasta and toss gently. Place the cups of spinach on the pasta and toss. The spinach will not be cooked, but rather a nice fresh addition.
  6. Season with salt and pepper. Enjoy!
