Easy Italian Beef Sandwiches – Crock-pot Recipe

There is nothing simpler, or healthier than throwing something in the crock-pot for dinner. When the kids have sports or club activities, I turn to he crock-pot and it saves me so much time and effort! My favorite crock-pot recipe is soooo simple and easy to do. It takes basically three ingredients to make Italian Beef Sandwiches– A beef roast, a jar of roasted red peppers and a jar of pepperoncinis.

If you want to add to the recipe, it’s totally flexible and comes out delicious every time!

  • 1 beef roast- enough for your family
  • 1 jar of Roasted Red Peppers
  • 1 jar of Pepperoncinis
  • Optional: Onion powder, garlic powder, pepper….
  • Sliced Provolone Cheese
  • Hoagie Rolls
  1. Place all three ingredients in the crock-pot. Cover with lid.
  2. If your roast is frozen, then cook on high for 9 hours.
  3. If your roast is thawed, then cook on low for 9 hours.
  4. Sometimes about 2 hours ahead of being finished, I turn the crock-pot up to high from low just to make sure the beef is nice and tender.

Throw it all in the crock-pot.

Place the meat and pepper combo on a sandwich bun. Top with your choice of cheese, then place it all into a broiler to get the cheese nice and melty.

Use the juice that’s in the crock-pot for a dip with the sandwiches!
