This Creamy Cilantro Vinaigrette is the PERFECT addition to a Mexican dinner. It’s tangy from the vinegar, yet creamy from the sour cream. Toss it with some crisp lettuce, layer with grilled chicken or carne asada– and YUM!
- 1 cup of cilantro
- 3 T of sour cream
- 4 T of white vinegar- you can also use lime juice
- 1/2 cup of olive oil- vegetable oil would be fine too
- salt/ pepper to taste
- 2 cloves of garlic
- 1 t of cumin
- 1 t of pepper flakes- or 1 T fresh jalapeno would work too
- Place all ingredients in a blender or food processor. Blend until smooth, about 1 minute.
