I like to provide my family with a multi vitamin simply because even though I do my best to provide my family with healthy food options, there are times when I know they are not getting the recommended amounts of fruits and vegetables, hence vitamins and nutrients. There are other ways to stay healthy too! Obviously eating healthfully is priority number one, but what about a life hack that reminds your family to do those healthful things as well?! I am sharing two quick and easy ways to bring health back into a busy lifestyle; a recipe for Avocado and Egg Toast perfect for a quick and easy breakfast that is packed full of nutrients, and a printable to remind loved ones to get in the habit of doing healthful tasks.
Avocado and Egg Toast
- 1 slice of toasted bread (I prefer a delicious sourdough, or nutty multigrain, but completely up to you!)
- 1 Egg, cooked the way you prefer ( I love cooking an egg over medium, complete with yolky goodness)
- 1 half of avocado
- salt and pepper to taste
Toast your slice of bread. You can use a toaster or toaster oven. While the bread is toasting, heat a small pan on medium heat. Spray with a non stick spray or add a little butter or coconut oil to the pan. I love a good over medium egg, but you can definitely use a scrambled egg, poached or boiled egg as well. A boiled egg would make this recipe even faster if you have it already boiled and waiting for you. Totally up to you! Once the bread is toasted, mash your ripe avocado on the toast. Spread evenly. Top with a little salt and pepper to taste. Once your egg is cooked, place it on top of the avocado toast. Done– an easy, healthful breakfast perfect for busy mornings.
- Add in a little red onion for a bit of a bite and tang.
- Use season salt in stead of salt and pepper. It gives the egg/avocado mixture just a bit of a different flavor.
- Substitute feta cheese instead of the egg.
- Crumble a bit of crisp bacon or prosciutto on top instead of the egg. You can easily crisp up the meat ahead of time and keep in a baggy in the fridge.
Life Hack- There are so many times as a mom, when I need to remind my family to do the normal everyday tasks to be healthy. Whether it be brushing teeth, hair or washing their face; the reminders get to be nagging. Instead, I use a simple trick to help them remember. Find the printable here at Golden State Mom.
Mason Jar Reminders: Set out some cute mason jars. Inside each jar, place a label on the inside with the task at hand. They could range from teeth brushing, to washing their face. Inside the jar, you place the needed items in order for them to fulfill the task; a toothbrush and toothpaste, a washcloth, or a hair brush.
